Castel del Monte Bombino Nero DOCG is one of the first, and quite rare, DOCGs dedicated exclusively to the production of rosé. Bombino Nero, the only variety included in this denomination, as its title suggests, must comprise a minimum of 90% of the wine. Not only is Bombino Nero a native grape but it is cultivated only in this area. This grape is high in acidity, low in sugar, and its clusters often contain non-pigmented berries, qualities which make it unsuited for red wine production, but perfect for rosés, which have always been an essential component of the Puglia winemaking culture
